1. Cheese angoori sabji with butter naan

Prep time: 5 mins

Cooking time: 10 mins Approx

Serves: 3-4 people

Ingredients:

1 tsp Oil
1 Tbsp Butter
1 tbsp Garlic Paste
1 tsp Ginger Paste
1/2 tsp Green Chilly Paste
2 Onion Paste
2 Tomato Paste
salt to taste (be careful as we add a lot of cheese in this)
1 tsp Kashmiri Red Chilly Powder
1/2 tsp Garam Masala
1 tsp Kitchen King Masala
1/4 tsp Haldi Powder
1 tbsp + 1tsp Coriander Leaves
1/2 cup Amul Fresh Cream
150 gm Amul Grated Cheese
150 gm Amul Cheese Diced
Extra Cheese for Garnish

Method:

In a heated pan, add oil and butter to enhance flavors.
Once butter melts, add garlic, ginger & green chilly paste. Saute it at high flame.
Once Sauted, add onion paste and tomato paste & cook at high flame.
Add all spices & cook for about 5 mins. Keep stirring in between so that gravy does not stick.
Add chopped coriander and now cover it to cook it fast on high flame.
Once the gravy is cooked totally, add cream and cook for 2 mins more followed by grated cheese and slow down the flame a little to melt cheese.
You can add water to adjust the consistency as per your requirement. Cook it till one boil.
Gravy is ready. This is full of aroma and cheesiness.
When serving add cubes of cheese and garnish with cream and coriander leaves and some more grated cheese.
Serve it hot with garlic/butter naan.


2.Veg burger

For patties:

▢1 carrot (finely chopped)
▢12 gobi / cauliflower (finely chopped)
▢8 beans (finely chopped)
▢4 tbsp sweet corn
▢4 tbsp peas / matar
▢0.5 tsp salt
▢6 potato / aloo (boiled & grated)
▢0.5 tsp cumin powder
▢1 tsp garam masala
▢0.5 tsp turmeric
▢1 tsp kashmiri red chilli powder
▢0.5 tsp chaat masala
▢1 tsp salt
▢4 tbsp coriander (finely chopped)
▢0.5 cup bread crumbs

For slurry:

▢4 tbsp corn flour
▢0.5 cup maida / plain flour
▢1 cup water
other ingredients:
▢2 cup panko breadcrumbs (for coating)
▢oil (for frying)
▢6 tbsp eggless mayonnaise
▢4 tbsp tomato sauce
▢2 tsp chilli sauce
▢6 burger bun
▢few slices tomato
▢few slices cucumber
▢pinch salt
▢few slices jalapeno
▢pinch pepper powder
▢6 slices cheese

INSTRUCTIONS

Veggie patties :

firstly, steam ½ carrot, 6 gobi, 4 beans, 2 tbsp sweet corn, 2 tbsp peas and ¼ tsp salt.
steam for 10 minutes on medium flame.
transfer the steamed vegetables to large mixing bowl.
also, add 3 boiled and mashed potato.
further, add ¼ tsp cumin powder, ½ tsp garam masala, ¼ tsp turmeric, ½ tsp chilli powder, ¼ tsp chaat masala and ½ tsp salt.
add 2 tbsp coriander and mix well combining all the spices well.
furthermore add ¼ cup bread crumbs and mix well. breadcrumbs help to absorb moisture from vegetables.
prepare a slurry by mixing 2 tbsp cornflour, ¼ cup maida and ½ cup water in a small bowl.
prepare ball sized patties and dip in maida slurry.
coat with panko breadcrumbs uniformly.
shallow fry in hot oil keeping the flame on medium.
fry on both sides, until it turns golden brown. drain off and keep aside.

Burger preparation:

First of all, in a small bowl take 3 tbsp eggless mayonnaise, 2 tbsp tomato sauce and 1 tsp chilli sauce.
mix well-forming burger sauce.
spread a tbsp of prepared burger sauce on the bun.
place a few slices of tomato, cucumber and jalapeno.
sprinkle salt and pepper slightly.
layer with a cheese slice.
further place prepared patties and cover with another part of the bun.
finally, enjoy veggie burger with chips and salad.
